The key is WHEN you make the change.  It's been a while since I did a fresh 
install, but as I recall the general steps are:

1) insert CD
2) initial install dialog (partitions, modules, etc)
3) install base packages
4) eject CD
5) reboot
6) second install dialog (get a bunch more packages)
...
N) profit?

You want to stop the presses between 5 and 6.  Jump to a different VT, edit 
the source file as Nacho instructed, run 'apt-get update', then jump back to 
VT1 and let the install complete.  This way the only non-unstable packages 
you are getting during the install process are the base packages.
